Ollie’s Cookies

In Ollie’s Road Trip, Ollie gets to eat his dose disguised as two peanut butter oatmeal cookies. You can use this recipe to make cookies just like Ollie’s!

And don’t worry, we’ve got nut free, egg free, and dairy free variations.

Monster Cookies

(Adapted from Sally’s Baking Recipes)

Yield: about 2 dozen cookies (2 cookies equal 1 peanut dose)

 

Ingredients

· ½ cup butter or nondairy substitute

· ½ cup packed brown sugar

· ¼ cup granulated sugar

· ¾ cup your favorite nut or sunflower butter

· 1 egg or 3 tbsp aquafaba

· 1 tsp vanilla

· ½ tsp baking soda

· 1 ¼ cups all-purpose flour

· ½ cup quick oats

· ½ cup chocolate chips (use a brand like enjoy life if you are dairy free)

· ¾ cup m&ms (see note for dairy free options)

· About 12 doses worth of peanuts

 

Directions

· Preheat the oven to 350 degrees Fahrenheit.

· Whisk flour and baking soda together in a medium bowl.

· Cream butter (or substitute) and sugars with a stand or handheld mixer on medium speed for 3 minutes.

· Add egg, vanilla, and nut or sun butter and beat on medium speed until well combined.

· Add the dry ingredients and mix on low until just combined, scraping the bowl as needed.

· Add the oats, chocolate chips, and m&ms and mix on low until combined.

· Chill dough for 30 minutes.

· Scoop 2 tablespoon sized portions of dough onto parchment lined baking sheets and bake for 11-13 minutes.

· When cookies come out of the oven, press half a dose worth of peanuts onto the top of each cookie.

· Let cool and enjoy!

  

Notes

· Miyokos is our favorite brand of vegan butter, however it is cashew based so folks with a cashew allergy should use coconut oil. Cookies made with a butter substitute and or aquafaba may be softer than the original recipe.

· Peanut butter can be used if you have graduated from OIT. If not, feel free to use sun butter or another nut butter.

· Allergy friendly m&ms substitutes can be found at nowheychocolate (no no’s) or at Yumearth (chocoyums)

· If you’re still updosing, measure out your dose and either split that between the too cookies or fit it all on one cookie.

· Tree nuts can be substituted for the peanuts.

· To ensure proper dosing, bag cookie pairs together.
